Cool fact about this herb: its name in Latin is “salvia” which was also coined from the Latin word “salvare”, meaning “to save”, which is probably because this cooking herb was also used widely for medicinal purposes way back a thousand years ago. 

It holds a pleasant woody and slightly bitter flavor which makes it a complimentary flavoring meat dishes, especially the ones with fatty content like duck and pork dishes, but goes with any choice of meat as well. You can add some to pesto paste to make a more flavorful pesto pasta or bread spread. Add to bean and tomato stews, even mix together with rosemary for a great rub to chicken or pork roast.
