Anise Seed (Ground)
Anise has licorice flavor, good in candies and liqueurs. It is mostly used in Europe for breads, cakes and cookies. In the Middle East Anise is used in soups, stews and seasoning like Ras al Hanout.
Anise gives wonderful flavor to Mediterranean dishes. Add Anise seed to reduce fishy smell on fish and shellfish chowder. For a grilled fish, in a pan melt butter add toasted Anise and a touch of lemon juice, make a sauce top it with lightly sautéed green onion. Brush egg wash on rolls or cookies and sprinkle Anise Seed before baking.
